Bottom: Mashed Potato and Mushroom Gravy
Today is my sister's convocation. It's sad that I can't attend because it was all in a sudden and I have classes going on at home.
Both of my parents attended her convocation and there's no one to cook for dinner, and since Raymond, my guy requested me to bake him something, I was thinking, "Why not? After all, I'm getting myself dinner too!"
Having some hard time to think what to cook, because Raymond is quite sensitive (or should I say fussy) over the taste of the food. As for me, as long as there's taste and eatable, then it's fine for me.
Remembering that he asked for lagsana, I took out a box of San Remo Instant Lagsana and followed the recipe at the back of the box. But it was not enough for him. Then I decided to make something that both of us like a lot, mashed potato.
Mashed potato is one of the easiest appetizer to prepare, unlike lagsana, which I needed to get ready with the meat sauce, then cheese sauce, and layer them, which already take more than 1 hour, plus 40 minutes of baking. But for a simple mashed potato, all you need are potatoes and butter with some seasoning. Of course I didn't make it that simple today. Now let's look at the recipe.
Mashed Potato Recipe:
4 large potatoes
1 tablespoon butter
1/2 cup minced meat
1/4 cup minced onion
1/2 cup milk
1/4 cup grated cheese
1/2 cube stock
seasonings
1. Cut potatoes into cubes. Place a pot of water on heat, then boil potatoes. Use fork to poke to check whether potatoes are soften. Drain the water with a strainer.
2. While potatoes are hot, add in butter and cheese, then mash potatoes using a masher. If you do not have a masher, then use a fork to press the potatoes to mash.
3. Add in milk, meat and onion. Mix well with a spoon.
4. For taste, add in stock and some seasonings that you desire.
5. Bake in oven for 20 minutes at 180°C. If you are not using any meat, you can choose not to bake.
Previous mashed potato.
2 tablespoon butter
1 tablespoon flour
1/2 cup milk
1/2 cube stock + 1/2 cup hot water (mix stock and hot water to get liquid stock)
6 button mushrooms - sliced
seasonings
1. Melt butter in a saucepan on medium heat.
2. Whisk in flour until it becomes thick. Then whisk in milk.
3. When gravy thickens, stir in liquid stock and sliced mushrooms. Let it boil until it reaches the correct consistency. You may also add in 1-2 tablespoon of soy sauce to get darker colour.
4. Seasonings for taste and ready to be served.
