Sardine Bolognaise Vermicelli

Vermicelli with Sardine Bolognaise

Today is my 3rd annual leave that I'm using for this year, and there are 4 more to go. Yesterday, I'd promised my family that I'll cook pasta since I'll be on leave. And so, here we go~

Vermicelli:
500g San Remo Vermicelli
Big cooking pot of water
2 tablespoons oil

Boil a big pot of water, then add pasta and oil (to prevent the pasta from sticking onto the pot). Cook them for 6-8 minutes or until pasta is ready, then drain the water.

Cooked Pasta

Simple Sardine Bolognaise:
1 canned Sardine with tomato sauce
4 tablespoons oil
1 large onion (chopped)
4 cloves garlic (chopped)
10 button mushrooms (sliced)
1/2 cup tomato sauce
1/4 cup chilly sauce
1/2 can water
1 cube of stock/1 tablespoon stock
Seasoning

Anti-clockwise: Canned Sardine, onion, garlic and mushrooms

1. First, use a fork to mashed the sardine as picture shown.

2. Heat up oil in a large saucepan, then fry the chopped onion and garlic.

3. Fry the mushrooms, then add in the mashed sardine, tomato sauce, chilly sauce and water.

4. Add in stock while the sauce is boiling, then let it boil for another 5-10 minutes.

5. Add some seasonings and it's ready to be served. You may also sprinkle some grated cheese, dried basil, dried oregano, or whatever you desire for more taste.

Did I mention that this is my brunch(breakfast+lunch)? Well, who cares! Time to eat!
